Bertha Ramírez

My mother fed five people on almost nothing, and it tasted like a holiday. She never wrote a word of it down.

Everything she knew lived in her hands. How the rice sounds when it is toasted enough. How the dough feels when it is ready, not a minute before. Which chile does the work and which one only makes you sweat. She could not have told you a measurement if you begged her; she would have said así, like this, and shown you.

So I stood in her kitchen with a notebook and I measured. Every pinch, every handful, every "until it looks right." And then I wrote down the part the recipe cards always leave out, the why. Why you toast the rice. Why the salt goes in late. Why the tortilla puffs on the third flip and not the first.

That is this book. Not a packet, not a jar, not a box with a picture of a family on it. The knowing itself, measured and written down at last, so it comes out right the first time, and every time after.

Seven days. My word on it.

Cook from it for a whole month. If it does not earn its place in your kitchen, you write to me and your money comes back that same day, and you keep the book. I am not going to argue with a woman over forty dollars.

Questions, Answered Honestly

Is this a printed book you mail me?
No, and I want you to know that before you spend a peso. It is a PDF: a file you open on your phone, your tablet or your computer the moment you pay. Nothing arrives in the post. You can print any page you like at home, and the four recetarios at the back are made to be printed and kept by the stove.
I am not a good cook. Is this too hard for me?
It is written for somebody standing in the kitchen with no one to ask. Exact measures, numbered steps, and under every step the reason it is done that way, because when you know why, you stop needing the recipe. And after every recipe there is an honest "if it went wrong," so a bad pot can be saved instead of thrown out.
Do I need special ingredients I can't find?
Chapter 2 is the whole pantry, twenty-five things, most of them already in your cupboard, and it comes with a substitution table for when your store does not carry something. Nothing in this book needs a specialty shop.
Is it in Spanish or English?
It is written in English, warm and plain, with the little Spanish words a mother would use, mija, olla, comal. Anyone can follow it.
I am not good with computers.
You do not need to be, mija. You press one button and the book opens like a photograph opens, no account to make, no password. If it does not open, write to me at write to me here and I will walk you through it myself, or give your money back.
Is this a subscription? Will you charge my card again?
No. One payment, one time. No membership, no monthly anything, no free trial that turns into a bill. I could not charge you again if I wanted to.
What if I lose the file?
Your link lives in your email, so that is the thing to keep. If you lose it, go to the download page and put in the email you bought with, and it comes right back to you.
What if I don't like it?
Write to me within seven days and I give your money back, and you keep the book. I would rather that than have you feel taken.
